Two ingredient chocolate pancakes

 

These goodies are vegan AND gluten free, so grab a tub now, plus both ingredients have long shelf lives and can be purchased ahead of time and stored for extended periods— if you don't eat the ice cream first!

Recipe:

  1. Melt 1 tub of Vegan Dark Chocolate Truffle ice cream by either letting it sit out, sit it in a bowl of boiling water or even easier, pop it in the microwave
  2. Combine 1 tub melted ice cream with 1 cup gluten free flour and mix until a batter forms
  3. Heat some olive oil in a pan; once hot, turn the heat to medium & spoon out tablespoons of mixture into the pan and cook for 1-2 minutes per side
  4. Repeat the process until all batter is used up
  5. Serve with your choice of toppings; I love banana & maple syrup PLUS for added goodness, add an extra scoop of Elato ice cream.
