Experience the magic of mochi with our 2-ingredient Elato mochi recipe! All you need is your choice of Elato ice cream and some glutinous rice flour!
1. Scoop your choice of ice cream (we used Fig Ripple) into cupcake wrappers and leave in the freezer to harden!
2. Melt 1 part ice cream
3. Add 1 part glutinous rice flour and food colouring (optional)
4. Whisk until combined
5. Cover with Glad Wrap and microwave for 1 minute
6. Wait to cool, then oil hands and knead until stretchy
7. Wrap frozen ice cream balls in mochi, coat in some additional flour if still sticky.
8. Leave in the freezer, or enjoy straight away!
